I love salsa. If I could only eat one food for the rest of my life, it would be chips and salsa. (I HATE questions like that, by the way…)

But seriously…salsa… It can make or break a meal. It can make or break a restaurant! There’s a restaurant in my hometown that has less-than-mediocre food…but the salsa! Oh, the salsa! My mouth is watering just thinking about the salsa… If it wasn’t 5 hours away, I would go buy some right now. it’s so good!!! *Bunny trail! Sorry!*

So anyway, salsa… I love good salsa. All types of salsa! Green salsa, red salsa, oniony salsa, peppery salsa, warm salsa, cold salsa, chunky salsa, smooth salsa, fruity salsa…you get the idea!

Yesterday, my cousin (who also happens to be one of my roommates) and I wanted some pineapple salsa. So what did we do? We went to the grocery store!

There are some recipes that you’re crazy if you don’t follow them exactly. This is not one of them. This is a “pinch of this, dash of that, handful of that, and a Sh*t-ton of garlic” type of recipe. In fact, this is a recipe I just made up in my head while walking through the produce aisle at HEB. I just threw in whatever sounded good, so I invite you to do the same! (If you add or change anything, I’d love to know so I can try it your way!)

Chunky Pineapple Salsa

Chunky Pineapple Salsa

1 red onion, chopped
1 red bell pepper, chopped
1 can of fire roasted tomatoes, mostly drained (Keep the juice in case you want to add it later!)
1 can of Rotel (I used Cilantro & Lime flavor)
1 4 oz can of chopped jalapeños
1 can of black beans, drained and rinsed
About half of a pineapple, chopped (Add more if you’d like! I like more, but that’s all I had…)
LOTS of minced garlic (I was lazy and used the minced garlic out of a jar, so I can’t tell you how many cloves… A couple spoonfuls at least. We like garlic…)
LOTS of cilantro
Juice from 1 lime

Combine everything in a large bowl and mix well. Add the extra juice from the tomatoes if you’d like. (I didn’t.) Cover and let it sit overnight to allow the flavors to mingle and get all up on each other like they’re at a high school dance.

Note: This salsa is not very spicy, but very flavorful. You can add some crushed red pepper or extra jalapeños or green chilies for more spice. You can also use all fresh ingredients instead of canned. (Except for the Rotel. You MUST use Rotel. Trust me…) I just didn’t want to spend a lot of time chopping stuff. Don’t judge me. This salsa would be really good with mango, too. I wouldn’t advise putting strawberries in it though, like my cousin suggested. That’s just odd. But who knows, maybe I’m wrong! It could be the best thing ever! (There, are you happy Steph??? 🙂 )
