I’m not a big meat eater. Never have been🤷🏼♀️ But veggies are the SHIT. Especially when they taste good😉
One day last fall, I really wanted some chili, so I looked in my refrigerator and freezer to see what I had on hand. And of course, I didn’t have any meat. Shocker🙄 But I had a bunch of fresh veggies. Sooooo, I threw it all together and hoped for the best!
Y’all. This stuff is good. Really good. And easy. And full of fresh veggies. And really, really good. I think you get the point.
1 red bell pepper
1 green bell pepper
2 Serrano peppers, seeds removed
1 lg can diced tomatoes
1 can black beans, drained
1 can kidney beans, drained
1 can tomato sauce
1 cup vegetable broth
2 tbsp chili powder
1 tbsp cumin
1 1/4 tsp salt
1/4 tsp cayenne pepper
1. Chop your veggies, and place them into a large pot. Sauté in olive oil about 6 minutes.
2. Add spices. Stir and cook for 30 seconds.
3. Add tomatoes, beans, tomato sauce, and vegetable broth. Bring to a boil.
4. Reduce heat to medium-low, stirring occasionally for 20 minutes.
NOTE: You can add lots of different veggies to this chili! This is a great way to use up those veggies you’ve let sit in the fridge for a little too long😜
