I’m a sauce girl…
Marinara sauce. Salsa. Teriyaki sauce. Buffalo sauce. You see where I’m going, yeah?
Anyway, since I started on my fitness journey a year ago, I’ve been finding healthier alternatives for my favorite foods. It’s kinda fun to experiment. Sometimes the result is amazing…and sometimes it’s…well…not.
This one? It’s pretty damn good. And easy. And…healthy!
1 sweet onion
1 red bell pepper
1 green bell pepper
10-12 Roma tomatoes
4-6 cloves of garlic
1 tsp salt
1 tsp pepper
2 tsp basil
1 tsp oregano
1/2 tsp crushed red pepper
*Optional: 1 can of tomato sauce
1. Put raw veggies into a food processor. (Yep, you don’t even have to do tons of chopping for this one! I told you it’s easy!)
2. Dump it all into a pot, add spices, and bring to a boil, stirring occasionally. This sauce is pretty chunky, so if you like it saucy 😉 add that can of tomato sauce!
3. Reduce heat and simmer for a while. I like to let mine simmer for 30-45 minutes. Ya know, to let all those flavors mix and mingle like teenagers at a school dance 😉
Oh, and if you have veggies that are about to go bad, this is a great way to use them up! This recipe is super easy to tweak and add different veggies.
Eat with zucchini noodles, cauliflower pizza, spinach & ricotta stuffed chicken (YUM!) or quinoa and roasted veggies. Just some ideas 😉
